Is there a way to add additional fields to the listings, in addition to the basic few that appear in the demo (gearbox, colour, mileage, details)? For example, can the end user add fields for stock #, VIN #, engine, sound system, interior color, etc.)?

VIN can be entered, although it is for your own records and is not displayed. The remainder should be added to the 'more information' box. The template mod will help you ... download it here.
